We do respect the origins (Latin, Caribbean and mediterranean) of cuisines at BRIO, but we do not let these physical borders define the limits of our cuisine. We combine freely the ingredients and methods of the Mediterranean, Caribbean and Asian cooking to create our own cuisine that we call SUNFARE. This SUNFARE is characterized by the flavors of dried chiles, fresh and dried fruits, and combinations of spices and herbs that excite the palate. Like the sun, our food is warm and colorful, and is an excellent source of energy
